ABOUT PERLÉE

Perlée is a luxury sparkling wine brand built on a hospitality-first philosophy. Opening in June 2026, we offer premium tasting experiences in an intimate setting (maximum 36 guests per day, Wednesday–Sunday). With our Executive and Sous Chef coming from a 3-Michelin-star background, we are establishing Perlée as the premier wine country dining destination in the Pacific Northwest.

POSITION SUMMARY

The Director of Hospitality is the guardian of the Perlée guest experience. This role demands a leader who understands Michelin-level service standards, possesses deep wine knowledge, and can orchestrate flawless, warm, and memorable experiences. Beyond daily floor management, this role is responsible for the strategic execution of VIP/Trade visits and driving brand loyalty through meticulous post-visit engagement.

KEY RESPONSIBILITIES

  1. Service Excellence & Floor Management
    • Lead daily service to ensure every guest receives a "Michelin-level" experience.
    • Oversee the flow of the premium tasting experience, managing timing and atmosphere.
    • Partner closely with the Executive Chef to ensure seamless coordination of pairings and guest dietary requirements.
    • Maintain a "flawless" environment, overseeing cleanliness, table settings, and ambiance.
  2. Trade & VIP Relations
    • Plan and execute customizable wine experiences for strategic trade guests, distribution partners, and private collectors.
    • Host vineyard tours and high-level tastings that reflect the authenticity and pedigree of the Perlée brand.
    • Develop and maintain long‑term relationships with trade partners to increase brand awareness and distribution.
  3. Guest Engagement & Sales
    • Drive wine sales and club conversions through experiences — tailoring dialogue to match guest knowledge levels.
    • Service Standard: Oversee the execution of post-visit protocols, including the 48‑hour handwritten thank‑you card program.
    • Manage the reservation system and guest database (Commerce7) to track preferences and history.
  4. Leadership & Operations
    • Recruit, train, and mentor a hospitality team aligned with Perlée’s core values (High Standards, Pursuit of Excellence, Sustainability).
    • Manage labor budgets, scheduling, and inventory of front‑of‑house supplies.
    • Ensure all team members maintain active OLCC Server Permits, adhere to Oregon liquor laws and Oregon Food Service Permits and.
